Pink Dragon Smoothie

Dragon Fruit, also known as pitaya, provides tons of nutrients to the body, and they’re fun to eat because they’re bright pink! Kids will love this superfood smoothie, and so will you. This funky fruit is packed with antioxidants and iron, so give it a try this Mother's Day to celebrate YOU with your family!

The real name for Dragon Fruit is Pitahaya, which comes from their native region; Central America. Its scaly dragon-like exterior comes from the cactus family, but don’t worry, these fruits are sweet and absolutely beautiful on the inside. Its high fiber content and low glycemic index make it a great option for someone who is diabetic.

What we did for this recipe was pick up packs of frozen dragon fruit in the freezer section at the grocery store. Most grocery stores will have this option available, including Whole Foods, Sprouts, Ralphs, Target, Kroger, and even Walmart and Amazon. The smoothie packs make this recipe super simple, and guarantees that you're getting the right amount to keep the sugar at a moderate level. You can also buy fresh dragon fruit in the produce section of your grocery store, but they tend to run fairly expensive compared to other fruits. 

We’ve paired dragon fruit with our Strawberry Jam Protein in this pink drink. Refreshing and bold, this smoothie will make your day brighter! This fun fruit is a must-try. 



Ingredients

2/3 cup Frozen Pink Dragon Fruit (pitaya), or one smoothie pack

1.5 cups Unsweetened Almond Milk (vanilla or unflavored. We used vanilla for flavor, but any unsweetened milk is great.)

1 scoop TRU Strawberry Jam Protein ( This would also be delicious with Vanilla Protein or Coconut Macaron Protein!)

1 Banana (frozen bananas make for the best texture, so peel your bananas and freeze them before making this smoothie. If you're short on time, fresh bananas are great too!)

½ cup Strawberries (frozen or fresh)

 

Directions


1. Combine almond milk, dragon fruit, banana and strawberries to the blender.

2. Blend on high until smooth and creamy.

3. Top your smoothie with some goji berries, dragon fruit or chia seeds for texture and enjoy!
