Coconut Ice Cream Bowl

The summer is in full force and what better way to enjoy your afternoon than with a little bit of ice cream? It is okay to treat yourself. Just make sure it is made of quality ingredients and portion control is your best friend. This smoothie/nice cream version is quick to make and sweet enough but still refreshing. Just what you need to cool down!

Coconut Nice Cream Bowl
Recipe makes 1serving
Time: 5 minutes

Ingredients:
1/4 cup Shredded Coconut (unsweetened and untoasted)
1 scoop TRU Coconut Macaron
1/2 tbsp Cashew Butter
1/2 tbsp Coconut Sugar
1 tbsp Coconut Cream
5 drops Coconut Extract, optional
3/4 cup Cashew Milk, unsweetened
1.5 cups Ice Cubes
1 dash Sea Salt

1) Pre-freeze the bowl you will serve it in. This is not necessary but will prevent the nice cream
from melting too fast.

2) Add all ingredients into a high speed blender with tamper and slowly blend using the tamper
to help blend the ice cubes. If you feel like you need more liquid, add more cashew milk
gradually as we want to achieve a thick icy texture.

3) Serve immediately and top with toasted coconut flakes and granola.
